We experienced different amazing receipts proposed by Italian chef Simone Rugiati, but we like at the best an easy one to cook. We will present it here below. Please enjoy Rugiati's traditional "spaghetti with garlic, olive oil, chilli and Chianti wine".
INGREDIENTS for 4 people
• 400 g of n. 5 spaghetti
• 4 or 5 of olive oil tablespoons
• 4 cloves of fresh garlic
• 1 glass of milk (as you prefer)
• 1 fresh sweet chilli (or other qualities of garlic)
• 1 classic bottle of Chianti wine
• salt and pepper
Peel and cut the garlic, take away its germ with a boxcutter. Soak it in a glass of milk for 10 minutes, so it will lost its strong scent. Cut the chilli and take out its seeds.
Meanwhile, boil water for pasta. Heat the olive oil in a large skillet. Add the drained chilli and garlic, but be careful, not fry them!
Add a few tablespoons of the boiling water creating an emulsion, but not burn it. After 5 minutes pour a glass of Chianti wine and raise the heat to evaporate its alcohol. Pour the pasta in boiling salted water and drain it in a pan after 2 minutes. Risottare the pasta, adding the water till it will become creamy. Serve as you desire by removing garlic and chilli ... or enjoy it with a good glass of Chianti wine.
